What We Eat: Lunch edition
Lunch is usually the biggest meal of the day for us. Part of that is because in the past we avoided big meals and clean up at night when we didn’t have any electricity or lights. Another reason might be because our European friends here eat their biggest meal at midday and we spent enough time with them that their habits wore off on us.

Just like breakfasts, we’ve put together a schedule of meals that we make for lunch, which we stick pretty close to. Here they are:
Monday: Macaroni Noodles with Sauce (More recently I’ve been making a white sauce with some kind of meat in it, we also love having MacNCheese powder in packages)Tuesday: Tacos (The most difficult part of this meal is making the tortillas. This week we tried making uff-da tacos with fried bread.)Wednesday: Meat and Potatoes (sometimes as meatloaf and mashed potatoes and other times in Beef Stew)Thursday: Damia Salad (Similar to falafel, damia is like a fried bean ball made of white beans, eggs, and seasoningsFriday: FrittersSaturday: Sweet and Sour Chicken with RiceSunday: Egg dish or Omelettes
Things that spice up our lunch menu include… Italian Seasoning Packets, Gravy Packets, Parmesan Cheese, Bacon Pieces, Salad Dressing Packets, Onion Soup Packets, Mac-n-Cheese Powder, Other Sauce Packets.
